Homemade Sopaipillas ~ Friday Foods

Hi, Sweet Friends!

Oh, how I love Sopaipillas!
Mary got Sopaipillas from Mi Mexico for her birthday. This photo was of Mary at age 83.

 It has been 5 months without Mary in our home, in our lives, but she remains always in our hearts!

We will be making Sopaipillas today with a recipe from one of Mary's cookbooks.

This recipe makes about 2 dozen Sopaipillas.

Ingredients:

1/4 cup water, warm (110 to 115 degrees) 1 pkg active dry yeast

(Milk Mixture)
1/2 cup dry nonfat milk, whisked with 1 1/2 cups warm water 

1 large egg, beaten
1/3 cup unsalted butter, melted
1/3 cup sugar
1 teaspoon kosher salt
4 cups all-purpose flour, divided
4 cups vegetable oil


Directions:
1. In a large bowl, stir together the warm water and yeast until the yeast dissolves. 
2. Let stand until foamy, about 5 minutes. 
3. Whisk in the egg, milk mixture, butter, sugar, salt, and 2 cups of the flour. 
4. Put the dough (it will be runny) in a large oiled bowl, stir to coat, cover with a damp cloth, and let stand in a warm place until doubled in size, about 1 hour.
5. Stir in the remaining 2 cups flour. 
6. Knead the dough in the bowl for about 1 minute, until soft.
7. Cover and let rise in a warm place until doubled in bulk, about 1 hour.
8. Punch down and use right away, or cover and refrigerate for up to 2 days. 
9. On a floured work surface, roll out the dough to a 1/8-inch thickness. 
10. Cut the dough into 4-inch triangles or squares.
 FRYING:

1. In a large, heavy sauté pan or Dutch oven, heat the oil over medium heat until it reaches 365° degrees on a candy thermometer. NOTE*** The oil is ready when a small piece of dough dropped into it sinks to the bottom, then rises to the top immediately.
2. Fry the pieces of dough in batches, turning occasionally, just until they are puffy and golden brown.
3. Using a wire skimmer, transfer to paper towels to drain. 
4. Serve immediately with butter, honey, powdered sugar, cinnamon, or all of the above. YUMMY~

Sopaipillas are a traditional dessert in Mexico and Spanish Countries.
