Whole 30 Challenge ~ Week 3

Hi, Sweet Friends!

 We completed Week 3 of Whole 30.
Day 1:
  • Pineapple slices
  • Large Salad, celery, carrots, Balsamic vinegarette (no sugar), tomatoes, peppers, and homemade Chicken Salad.
  • Baked (0n rack) Pork Steaks, Home Canned Green Beans, Boiled Potatoes with Ghee
Day 2:
  • Unsweetened Grape Juice Home Canned, Scrambled Eggs with Chopped deli Ham 
  • Deli Ham Lettuce Wraps 2
  • Cornned Beef with Cabbage & Onions
Day 3:
  • Egg Scramble with onion, pepper, tomatoes
  •  Deli Ham Lettuce Wrap & 2 hard boiled Eggs
  •  Cornned Beef with Cabbage, Onions, Potatoes & Carrots (Irish keep out the carrots)
Day 4:
  • Banana & Cutie

  • Salad w/green pepper, mushrooms, tomato

  • Pork loin w/fresh pineapple and onions, baked sweet potatoes, and green beans
Day 5:
  • Salad w/green pepper, mushrooms, tomato

  • Cornbeef & cabbage w/potatoes

  • snack: 2 cuties
Day 6:
  • Banana, cutie slices, & pineapple bowl
  •  Salad With Dump Ranch Dressing
  • Green Chili Stew, potatoes & roasted green chilis
Day 7:
  • Egg Scramble, hashbrown chunks, onions & peppers
  • Salad with green pepper, onion, mushrooms, chia & flax seeds, and homemade herb oil & vinegar
  • Roasted Turkey, spinach & onions, baked sweet potatoes.

CJ's Chicken Salad
Ingredients:
  •     1 lb cooked Chicken breasts, boneless skinless, shredded/or 1 16oz canned Chicken Breast
  •    1 tsp Garlic powder - optional
  •     1 tsp Thyme, dried chopped
  •      2 Scallions, green tops, chopped
  •     1 stalk Celery, chopped small
  •     1 tsp Black pepper
  •     1/2 tsp Sea salt
  •     1 Tbs Lemon Juice/ or the Juice of one lemon
  •     1 tsp Dried onion, minced
  •     1 tsp Dilled Pickle Relish
Directions:
In a large mixing bowl, shred the chicken or drain the canned chicken (save the liquid for soup - freeze it). Add all the spices, onion, scallions, and celery and mix thoroughly. Add the pickle relish, lemon juice, and Olive Oil Mayonnaise and mix thouroughly.

*I have added pickle juice or banna pepper juice to the mix. 
I top with dressing, this time I used a Balsamic Basil Dressing.

Here are my thoughts on this third week...
Both Hubby and I are not missing the sweets, the cravings have all but disapeared. I'm not even sure that Chocolate is what I want on the 1st of April, Easter. 

Fast food is not something we think about, whole foods are easy to fix and just as delicious. I have more energy. Hubby and I are in bed by midnight and up at 7am. Totally a change for us. We were snacking night owls, who loved to movie binge and snack till the wee hours of the morning.

We seem to have found our groove. I can see us eating these things we have removed once again, but they won't be what leads our diet. They will be used to compliment a meal, not be the meal. 

We have decided to invest in a bread maker and make our own breads, dough, and noodles. We will leave out preservatives, dyes, and unhealthy ingredients. We are determined, more than ever, to make this choice a life choice and not a fad.

I have found some wild food allergies. I will be seeing the allergist soon to talk about these findings and how to get through them, deleate them, or avoide them all together. 

A good week of good foods and good findings. Some fun meals, simple meals, and we are feeling good.
