4 Healthy Harvest Treats ~ Friday Foods
Hi Sweet Friends!
It's October 31st and we celebrate the Harvest. With Trick-Or-Treaters ringing the bell all thru dinner, we planned a nice easy finger foods type dinner that can be eaten on the run. I've come up with some fun treats to try from around the WEB.
1. Rainbow Veggie Pinwheels
Ingredients:
1 tablespoon dry ranch powder ((you can also use store bought))
Directions:
Spread the cream cheese on the tortillas. Lay on the chicken, spinach, cabbage, carrots, and peppers. Roll up tightly and slice. Place slices pinwheel up to serve.
2. Taco Bites
Ingredients:
Place chips on cookie sheet. Top with refried beans and cheese.
Warm in oven @ 350 for 5-10 mins. These chips fold easier when really warm.
Serve with a side of Salsa.
3. Apple Pie Bites
Ingredients: Apple Pie Spice
Ingredients:
1 tbsp Low or no-fat yogurt, plain

∙ Serves 4
- 1 cup Chicken, cooked1/2 cup Baby spinach, leaves
- 1/2 cup Cabbage, purple
- 1/2 cup Carrot strips
- 1/2 cup Red bell pepper strips
- 1/2 cup Yellow bell pepper strips
- 4 Tortillas, large
- 2/3 cup Whipped cream cheese
Other
Directions:

- Taco Chips, the octagon shape
- Low-fat Refried Beans
- Mixed Shredded Cheese

3. Apple Pie Bites
Ingredients: Apple Pie Spice
- 1 1/2Tbs. ground Cinnamon
- 1 1/2Tbs. ground Nutmeg
- 1 tsp. ground Allspice
- ¼ cup packed light brown sugar
- 1 teaspoon apple pie spice, and additional apple pie spice (about ¼ teaspoon) for sprinkling on top of crescent rolls
- 3 tablespoons butter, melted
- ⅓ cup chopped pecans
- 1 small Granny Smith apple, cored and sliced into 8 (1/2-inch) slices
- 1 (8-ounce) can Pillsbury Original crescent rolls
- Preheat your oven to 375 degrees F. Line a baking sheet with parchment paper.
- In a small bowl, combine brown sugar and apple pie spice. Set aside.
- Melt butter and toss apple slices in butter, set aside.
- Arrange crescent roll triangles on baking sheet lined with parchment paper. Evenly distribute brown sugar mixture onto each triangle.
- Sprinkle each triangle evenly with the chopped pecans.
- Place an apple slice on the wide end of each triangle. Wrap crescent roll dough around each apple.
- Brush each crescent roll with remaining butter. Sprinkle lightly with additional apple pie spice.
- Bake for 10-12 minutes, or until golden brown. Cool for 5 minutes before serving.
Ingredients:
∙ Makes 12 deviled eggs
Produce
- 1 Chives
- 1 Fully ripened avocado, pitted and diced
- 1 tbsp Jalapeno
- 1 tbsp Onion
Refrigerated
- 6 Eggs, hard cooked
Condiments
- 2 tsp Dijon mustard
Baking & Spices
- 1/2 tsp Black pepper, ground
- 1/2 tsp Salt
Oils & Vinegars
- 1 tsp White vinegar
Dairy
Directions:
- In a small bowl, place egg yolks; add the avocado and mash until smooth.
- Stir in yogurt, mustard, vinegar, salt and pepper, and mix thoroughly.
- Stir in jalapeño and onion, then spoon into egg white shells, dividing equally.
- Arrange on a serving plate. Cover lightly with plastic wrap and refrigerate for up to 3 hours. (Don't serve long after 3 hours as the avocado will start to darken.)
- Garnish with chives, if desired.
