Hubby's Chicken Enchilada Soup

Hi, Sweet Friends,
 
Today we are making Carrie's Chicken Enchilada Soup. This is not a spicy hot soup, but you can add as much heat as you like.
 The great thing about this soup is that it is easy and cooks fast. It's just a matter of heating all the ingredients together. 

Let's get cookin'! 

This recipe serves 4 to 6. Double the recipe easily for a crowd or larger family.

Ingredients:
 
1 Rotisserie Chicken, skinned, de-boned, and cut into small pieces.
2 Red Onions, diced
2 Tablespoons Oil, Sunflower or Safflower Oil
 2 boxes of Chicken Broth
1 can Black Beans, use whole can and don't drain out or wash beans
1 can Whole Kernel Corn, drained
1 can Southwestern Style Stewed Tomatoes & Green Chilis
1 Can diced Fire Roasted Tomatoes


 1 can Green Enchilada Sauce, Mild, (you choose desired heat)
1 can Whole Green Chilis, Mild, remove stems and membrane with seeds, chopped (you choose desired heat)
 1 rounded Tablespoon of Chili Powder, (more added for stronger flavor)
 1 teaspoon of Cumin
2 cups water
 Toppings:
6 Tortillas (2 chopped in soup and 1 per person)

2 Green onions/Scallions, chopped
1 small bunch Fresh Cilantro, chopped 
2 limes, halved 
1 Avocado sliced
1 cup shredded Mexican Cheese/Cheddar Blend
Directions:
 In a large cooking pot on high heat, cook onions in the oil until slightly browned.

Add 1 rounded Tablespoon of Chili Powder & 1 teaspoon of Cumin to the pot.
 Add both boxes of Chicken Broth.
Give it a stir with a wooden spoon.

 Add the water, corn, chopped green chilis, and green enchilada sauce.

 Add the whole can of beans.
Add the chopped chicken.
Add the diced & Southwestern tomatoes.
Give a good stir.
Bring to a boil, stirring occasionally.
 Cover and turn the heat to medium for 30 minutes.

Brown the tortillas over the flame or in a pan on high heat. 
 

 Slice 2 Tortillas, browned by flame or on the pan and add to the soup before serving.
 At the table, add the Green onion, sliced avocado, lime juice, cilantro, and 1 large tortilla per person.

 Top off with a bit of cheese.
A perfect bowl of deliciousness!
We grilled extra Tortillas.

Add a squeeze of Lime and a slice of Avocado.
Top off with some fresh Cilantro, I chopped it a bit.
