Christmas Brunch ~ Friday Foods

Merry Christmas to you and your kin!
We are enjoying a Christmas Brunch the is Fine Christmas Morning! We headed off to Church, are home now and hungry!



I prepared a variation to the delicious recipe from  Anna  of Snacking  In The Kitchen.

Instead of the Sausage in Anna's Recipe, I added onion for this batch. It was a good change and we added the Salsa on top for an extra kick.

 We also had our homemade Blueberry, Choke cherry, Black Current Jam on Fresh Biscuits. We enjoyed a cup of hot Chocolate Mint Tea to accompany the brunch! Yummy!  The canned Salsa is from our pantry canning this Summer. 

Here is how I made our rendition of Anna's Egg Muffins.
















Ingredients:
12 Eggs (med & small range) or 8 Large eggs
1 Cup Broccoli Florets, Chopped small
1/2 Onion, Minced
1/4 Cup Milk
1/2 Tablespoon Vegetable Oil, I used Olive Oil
1/2 teaspoon Baking Powder
Salt & Pepper to taste
1/2 Cup Mixed Shredded Mexican Cheese
Cooking Spray (olive oil)

Directions: 
Preheat oven to 375 F
Bake for 15-20 minutes.

Crack your eggs into a mixing bowl.

Add Chopped Broccoli & Minced Onion.  Add Salt & Pepper.

Add Baking Powder, Milk, and Oil. Then mix.

Spray baking pan. I used mini-muffin pan for bite-sized egg muffins.

Spoon mix into cups. Add a pinch of cheese to the top.

Place in 350* degree oven, preheated. Bake 10 to 12 mins. if using mini-muffin pan. (See Anne's Recipe for regular muffin pan cooking time.) LINK
 Preheat oven to 375 F
Bake for 15-20 minutes for regular sized muffin tin,

10-12 minutes for mini-muffin tins.


I Cooked the Left Over in a Corning Ware Dish in the Microwave @3mins  stirring after each min. Top with Cheeses!

They Smell Wonderful!!

They are done when golden and no egg runs.

Delicious Goodness!

Hubby topped his with Salsa! Yummy for a Mexican Muffin!

Update! We liked these so much we had them again, we added:
1/2 pound cooked turkey bacon, chopped then fried up
1 green onion, medium sized and minced

These we cooked in the regular muffin tins and YUMMY! again!
