Sweet Potato Health Benefits and Recipes
I love Sweet Potatoes and not just because they are good for you, but because they taste good! The Sweet Potato contains Vitamin A, Vitamin C, Potassium, Iron, and Calcium. They have no fat, and 4 grams of fiber. Sounds like a win/win to me.
We have a few of our favorite Sweet Potato Recipes that are easy and not the conventional way of cooking Sweet Potatoes.
-Ancho Sweet Potato Latkes: (potato pancakes)

-Sweet Potato Chips:
I wash a sweet potato and then slice it on my mandolin with the skin on. I slice thin slices as I can get them. I rinse them in cold water and then put them on a plate I use a little bit of garlic/pepper seasoning (McCormick.com) and a dash of salt and that's it. Microwave the sweet potato slices for 6 minutes and they come out crispy (cooking may depend on the strength of the microwave). I eat these with a cup of soup or a turkey sandwich.
-Baked Sweet Potato:
I also microwave these after washing them in cold water. Prick the skin with a fork and place on a plate. Cook 5 to 8 minutes depending on the microwave and the size of the Sweet Potato. If it is squeezable after 5 mins if it is not, then keep the cooking going. I add 1 Tbsp. Butter and a dash of salt to my potato. I like them for lunch and as a side for dinner.
