MAD Hubby's Enchilagna Casserole

Hi, Sweet Friends,

Today we are enjoying MAD (Hubby's Initials) Hubby's "Enchilanga" Casserole. The way you say it is an Enchilada made in a Lasagna style of layering the casserole.

This is so delicious and costs little when you make it in a large batch. Great for Company, Make & Freeze leftovers, or for a large family. Makes 12 - 20 servings (20 if served with side salad & Spanish Rice)



This Enchilanga Casserole is made with a Rotisserie Chicken and layered out like a lasagna. The tortillas are layered rather than filled and folded. It is easy and delicious! What more could you want from a dinner!!
Ingredients:
1 Rotisserie Chicken, skinned, deboned, and shredded
1 package 10inch Flour Tortillas
1 large Onion, chopped
1 large bag, 32oz. Mexican Cheese
1 large can Black Olives, drained but save the liquid
1 large can Green Chili Sauce
1 large can Green Chilis
1 can Corn, drained

Directions:  
Preheat the oven to 375°

1. In a large stone or glass rectangle dish 9x13", put in the bottom of the dish 3Tablespoons of the Green Chili Sauce. Spread it around with the back of a spoon. 

2. Place two tortillas on top of the sauce.

3. Sprinkle one large handful of the cheese over the tortillas.

4. Add to the top of the cheese, 1/3 of the shredded chicken.

5. Place 1/3 of the onions on top of the chicken.

6. Add 1/3 of the corn on top of the onions.

7. Sprinkle 1/3 of the drained olives on top of the corn.

8. Sprinkle 1/3 of the green chilis on top of the olives.
     This is the first layer.
(This is similar to making a lasagna.)

9.  Repeat steps 1-8 two more times.

10. Mix the remainder of the green chili sauce with the olive liquid in a bowl and set aside. (This is the sauce)

11. Place 2 more tortillas on top of the casserole.

12. Pour the mixed sauce on top of the tortillas.

13. Add 2 large handfuls of cheese on top of the sauce mix. 

14. Place aluminum foil over the casserole.

15. Put the casserole into the oven on the middle rack. (move the rack to the middle slots in the oven)

16. Bake the casserole for 35-45 minutes or until the casserole is bubbly around the edges. 

17. Remove the aluminum foil from the casserole dish and bake the casserole another 5 minutes to brown the cheese on the top.

18. Remove the casserole from the oven and allow it to cool for 10 minutes.

 19. (Optional) You can top this with shredded lettuce, chopped tomatoes, hot sauce, guacamole, sour cream, and chopped green onions.


20. Serve with Spanish Rice or Refried Beans.
