Helpful Cooking Measurements and Substitutions English



 Hi, Sweet Friends!

Have you ever read a recipe that you just couldn't figure out? Maybe an old recipe you are trying to recreate "Just like Grandma use to make?"
Well, you are not alone. Back when having paper was scarce, recipe writers used abbreviations and (strange to many of us) words not used today! Like, what is a peck? How much is a pinch? Is it my husband's pinch, my pinch, or a child's sized pinch? Hmmm...
So, the best way to figure this out is to do a bit of research. I've gathered a few Measurements & Substitutions in one place for further reference for you and for me!

My Americana Cookbook of the 1990s had a few tidbits to pass along.

Measurements:
 what?         is equal to what?                      (abbreviations)   
a pinch                            1/8 of a teaspoon, or less (tsp. or t.)
3 teaspoons                     1 tablespoon (Tbsp. or T.)
4 tablespoons                  1/4 cup (C.)
16 tablespoons                 1 cup    (C.)
2 cups                               1 pint    (pt.)
4 cups                               1 quart  (qt.)
4 quarts                             1 gallon (gal.)
8 quarts                             1 peck   
16 ounces                          1 pound  (lb.)
8 ounces liquid                  1 cup       (fl. oz. or fluid ounces)
1 ounce liquid                    2 tablespoons

Substitutions:




What?                                       for What?
 1 tablespoon corn starch          2T. flour 
                                                  or 2 tsp. quick-cooking tapioca     
 2 teaspoons arrowroot              1 tsp cornstarch
1 teaspoon baking powder        1/4 tsp. baking soda + 
                                                  1tsp. cream of tartar
1/2 cup brown sugar                  2 T. molasses in 1/2 cup granulated
                                                    sugar
3/4 cup cracker crumbs             1 cup bread crumbs
1 tablespoon fresh herbs            1 teaspoon dried herbs
1 fresh onion                              2 T. instant minced onion, 
                                                    rehydrated
1 small clove garlic                    1/8 teaspoon garlic powder
1 cup whole milk                        1/2 c. skimmed evaporated milk +
                                                    1/2 c. water
1 cup buttermilk                          1 cup non-fat plain yogurt
