MAD Hubby's Easy Italian Pasta Salad ~ Friday Foods
Hi, Sweet Friends!
This recipe came about by MAD Hubby and his "Chef Palette". This is not your ordinary Pasta Salad as it contains many different flavors all in one dish! Even though Capers could be added to this recipe, MAD Hubby chose to leave them out.
In my opinion, I like the little saltiness that the Capers add. So you choose if you want to add them to your salad or leave them out. :) MAD Hubby also used White Ground Pepper for a tiny bit of a kick. You can choose to use regular Black Pepper if you wish. As is all ingredients listed, if you don't like it, leave it out! We do this all the time! So, make it your own :)
All of these ingredients were purchased at Walmart and are staples on their shelves.

Ingredients:
1 lb. box Rotini Pasta - cooked
5 oven-baked tomatoes (jarred) w/olive (in oil) - rough cut
1/2 can (jar) artichoke hearts - drained - chopped in half (large chop)
5 rounded tbsps chopped stuffed green olives (w/ pimiento)
1/2 can (8oz. can) sliced mushrooms
1/2 jar roasted red bell peppers - drained - rough chopped
1/3 jar cocktail onions - drained - sliced in quarters
1 can Black Olives - drained- sliced or whole
1 bottle Italian Salad Dressing (choose your favorite) ***We used Newman's Own Italian Salad Dressing
White Ground Pepper to taste
Directions:
1. Cook the pasta, drain and rinse in cold water to stop cooking.
2. Place the pasta in a bowl and set aside.
3. Add all ingredients to the pasta bowl and mix well.
4. Chill for at least two hours before serving. This salad is even better when it has set to chill overnight.
