MAD Hubby Homemade Pickles ~ Friday Foods

Change that to say, "Not so Kosher Pickles".
Hi, Sweet Friends!

As usual, we are in the Canning Season! YES! We are finally, after a strange Summer, bringing in some great produce from the gardens. We had enough cukes to make 4 quarts of pickles. 
We used the Water Bath Canning Method and make slices and spears. Pickling whole pickles come at the end of the season when we are really tired of canning. Oops! Did I really type that? 

 For this batch of MAD Hubby's Homemade Pickles, we started with a package of Mr. Wages "Kosher Dill Pickles" and twisted it up a bit. This extra bit makes the pickles no longer "Kosher" as we added Whole Pickling Spices to the brine mix.

Here is how we made MAD Hubby Homemade Pickles!

 This recipe makes 7 Quarts

Ingredients:
9-11 lbs pickling cucumbers (about 50- 3 to 4-inches long)
1 pouch Mr. Wages "Kosher Dill Pickles" Brine

31/2 cups White Distilled Vinegar (5% acidity)
71/2 cups water
(make brine up in a stainless steel pot)

 Put in each jar:
1/8 teaspoon Pickle Crisp
Pickle Crisp Granules are a wonderful addition to homemade pickles. This makes the pickles crisp.

1/2 teaspoon Pickling Mix
This recipe makes 7 Quarts
Sliced Pickle Chips Directions:
Sliced Cukes
 1. Wash & slice cucumbers into 1/4" slices or less.

2. Set aside cucumbers in a bowl until jars have been sterilized.

3. Make the brine as directed on the package or the pickling recipe.

4. Pack cucumbers into clean sterile jars. This is the Cold Pack Process. 

5. Add Pickle Crisp & Pickle Spice to each jar.

 6. Add brine into jars up to the neck of the jar. (1" below the top of the jar.)

7. Using a warm damp cloth, wipe the rims of each jar before placing the seal on the jars.

8. Add the rings to the jars. Hand tighten only till secure. ***Don't over tighten the rings.

9. Process jars as directed on the Mrs. Wage's Pickle Mixture or as per the recipe you are following if not using a premade mixture.

Pickle Spears

(directions for pickle spears below)

 Sliced cucumbers are perfect for sandwiches and snacks!
For pickle spears,  
1. Wash the pickling cucumbers and remove the "bumps".

2. Slice the cucumbers lengthwise in half then cut them in wedges (like below) in thirds. 

3. Trim the ends of the cucumbers, if needed. Some of ours were yellowed and some were bug chewed. YEW!
4. Pack the spears into the jars. ***It is easier to pack spears into the jar with the jar on its side. The cucumber spears stay upright and nicely tight this way.
5. We put some spears across the top to keep the others in place when processing.
6. Then stand the jars and add pickle crisp & pickle mix.

7. Add brine into jars up to the neck of the jar. (1" below the top of the jar.)

8. Using a warm damp cloth, wipe the rims of each jar before placing the seal on the jars.

9. Add the rings to the jars. Hand tighten only till secure. ***Don't over tighten the rings.

10. Process jars as directed on the Mrs. Wage's Pickle Mixture or as per the recipe you are following if not using a premade mixture.
Cucumber Spears makes a great side snack. We like to eat them just out of the ridge in the cold jars. I guess, you really can't take the country out of the girl. :)


Well, after Canning Season comes to an end, the faster the food gets in the jars, processed, and placed in the cupboard the better!
