Hi, Sweet Friends! 

This Lemon Cake with Lemon Icing is not only delicious, but it has Vanilla in the center between the layers! Yes!


Lemon Cake with Lemon Icing


You will need:
1 Lemon Cake Mix (We used  Betty Crocker cake below)

Lemon Cake Mix
Use the directions on the box for perfectly desired cake.
Cake Box Back, Duncan Hines, CJD.Sign(I trashed the Betty Crocker Box before I could take a photo!)
1 Can Vanilla Frosting
1 Can Lemon Frosting
3 large eggs
Oil & Water (amounts on the box)
 Tools:
Cake Pan
Parchment Paper & Scissors
2 bowls - 1 small & 1 large
whisk or electric mixer
measure cups
Spatula

Crack eggs into a bowl and mix them. Set aside.
Pour cake mix into a large bowl.
Add oil & water. Add beaten eggs,
Whisk or Electric mixer beat the ingredients.
When it is smooth with no clumps of cake mix, 
Pour into parchment lined pan.

To make Parchment Lined Pans:
We used Reynolds Kitchens Parchment Paper


Pull and cut off a piece of parchment paper that will fit all the way in the bottom of the pan. This cake pan is around.

Press into bottom of the pan to make a pattern. Pressing fingernail around the bottom of the pan will make a mark to cut on.
With scissors, cut on the line made by your fingernail. Cut two by using the first cut circle as your pattern for the second one.

There you have two circles.
Line both round with the parchment paper.
Pour in 1/2 of the cake mixture into one of the pans.
Pour second half of cake mix into second lined pan.

Bake cakes as directed on the cake box. Don't over bake.
Let it cool till the cake is no longer warm to the touch. If it is too warm, the icing will slide off the cake.
When cooked, flip the cake over and peel off the parchment paper. Ice the cake with the Vanilla frosting.
Place the second cake upside down on the first iced cake. Peel off the parchment paper on the second cake.
Ice the top cake with Lemon Icing. Also, ice the sides with the Lemon. If you want a fluffy top use the rest of the Vanilla can and mix it with a bit of the Lemon. Put this icing on the top of the cake and lay your spatula on the flat side, on the top of the cake and pull up. It will make peaks all over the top of the cake. Very Pretty looking.
Ice the top and sides with the Lemon Frosting.
The Vanilla adds a slightly different taste. This is nice and breaks up the Lemon Flavor.

Dairy Free Ranch Dressing Recipe ~ Friday Foods!

Hi, Sweet Friends!
This month I have joined some FaceBook Friends in a group that shares salads for the month of May.
Here is one if the dressing recipes I have tried. Dairy-Free Ranch Dressing is made with yogurt and mayo. It is very much like the consistency of regular ranch dressing.

So, be prepared to see many salads and dressing recipes this month!

 Dairy-Free Ranch Dressing Recipe
1 C mayonnaise
¼ C dairy free plain yogurt
1 t garlic powder
1 t onion powder
1 t dried parsley
salt & pepper to taste
¼ t dill weed

Whisk or blend until smooth. If too thick, you may add non-dairy milk to desired consistency.

I have used a similar dressing and added a 1/4 teaspoon of dried onion flake.
