Easy Acorn Squash ~ Friday Foods

Today we are cooking up some delicious Acorn Squash. Acorn Squash is a Winter Squash only because of the time that it is mature. Acorn squash has an orange meaty flesh similar to that of Sweet Potatoes. It has a nutty flavor and can be baked, boiled, sauteed, stuffed, steamed, or mixed into casseroles.

Acorn Squash has many healthy properties. 7 Incredible Benefits of Acorn Squash.

Acorn Squash is high in Vitamin C, Vitamin A, and is high in dietary fiber (source: Acorn Squash Nutritional Facts by Dr. Mercola's Natural Health Newsletter, 2018). Basically, it is good for you and yummy, too!
 
Today the recipe calls for baking the Acorn Squash.v78
Ingredients:
1 half an acorn squash per person
Coconut Oil Spray
Baking Tray
Butter (optional)
Salt & pepper to taste
Directions:
1. Wash, cut in half, and scoop out the seeds and strings with a spoon.

Insert the knife
Cut all the way down
Cut the length of the ribs
scrape out the insides









Top photo, use a spoon to scrape out the insides of the squash. The second photo is sprayed with coconut oil spray on the top squash and the bottom squash has yet to be sprayed.

 2. Rinse and pat dry with paper toweling.
3. Spray the insides of all the halves with the Coconut Oil Spray. The photo shows the top half sprayed, the bottom half is not sprayed, yet.
4. Lay skin side down and cut side up in the large Baking Tray/Dish. A 9x13" Baking dish holds 6 halves. I cook for two of us in a square 6x6" pan is shown in the photo. (I lay my Acorn squash skin down for a dryer squash. Lay the Acorn squash cut side down/flesh side down for a moister squash). 

5. Place in a 350*F oven for 1 hr. or until the flesh easily scrapes away from the insides of the squash skin.

For mashed Squash, scoop out the flesh from the skin, in the photo on the left. Serve as is cooked, in the photo on the right.

6. Two ways to serve:
  • A. Add a pat of butter to the inside center of the squash, salt & pepper and serve on the plate with the skin side down.
  • B. Place all the squash/flesh into a large bowl and mash like potatoes, add butter and salt & pepper.
Squash fully cooked & out of the skin.
Chop squash for casseroles.


I save seeds ONLY if they are organic vegetables.



 It's very easy. I eat mine without butter, however, hubby likes his with butter.
