Easy Tamale Casserole
Hi, Sweet Friends!
It's Friday and we are making Tamale Casserole!
We buy our Tamales fresh from a wonderful lady once a month. These also freeze well in the corn wrappers, placed into a freezer bag.
On to the delicious recipe!
Ingredients:
1 dozen/12 Tamales
Stag Turkey Chili (or Regular)
Hormel Turkey low fat Chili ( or Regular)
1 quart jar/32 ounces Salsa (fresh, canned, or homemade)
Taco Seasoning Mild (you can choose the heat you like)
Shredded "Mexican Blend" Cheese
Directions:
1. The tamales are wrapped and cooked in the corn husks/corn wrappers and they should look something like the photo below.

To do this, unroll the husk away from the tamale, carefully.
They will come out looking like this above.
3. Now cut the Tamales into chunks for the casserole.
I cut mine about 1inch pieces.
3. Place the tamale pieces into a large bowl.

6. Pour the Taco Season into the bowl with the chili and the salsa. Mix well to incorporate the Seasoning Mix.
7. Either spray the 9x13 inch baking pan with Olive or Coconut cooking spray OR
Line the pan with Aluminum Foil.
For this recipe I prefer to use the Aluminum Foil for easy clean up.
8. Now layer the baking pan with a layer of chili mix.
9. Add a layer of Shreaded Cheese.
10. Add a layer of Tamales, cut into 1 inch pieces.
11. Add a layer of cheese
12. Add a layer of the Chili mixture.
13. Add a final layer of cheese.
14. Add all the remaing cheese to the last top layer of the casserole like shown below.
for 1 hour.
If you don't like browned cheese, you can cover the whole casserole with Aluminum foil to keep it from browning.
The Tamale Cassore is hot and ready. Do be careful as the cheese has a tendancy to be very gooy.

Serve this delicious casserole topped with shredded cheese, shredded lettuce, chopped tomatoes, chopped onion, and a bit of salsa!
