Chicken Kabobs ~ Table For Two

Hi, Sweet Friends,

We enjoy a quiet Friday Night Dinner, just the two of us.
We also enjoy grilling and tonight we are having Chicken Kabobs.
Thinking in terms of our lifestyle being Semi-Retired, we love to entertain, however, we do like that dinner for two with cozy candles and simple dining. This recipe for Chicken Kabobs is just perfect grilled dinner. We add a Jasmine Rice and Side Salad.
 
Setting the table is a nice way of creating an inviting meal at the end of a workday, a day out on the local town, or a day trip out to the mountains. 


In a time of rushing through the day and grabbing a quick bite to eat,  it is really nice to take a few moments to sit down and enjoy a meal. Even if you are by yourself, set a nice table, add a candle, and sit enjoying the quiet moments.
Placemats in a neutral color, white plates, and candles.


The table setting is very simple with a set of tan circle placemats, paper napkins (folded at the corners), a few candles in similar shades and dishes with silverware. It is simple, elegant, and very easy!

Ready to Make IT?
Chicken Kabobs
 5 metal skewers, 12" long
Ingredients
3 Chicken Breasts, skinless & boneless 
1/2 Red, yellow, & orange peppers
1 Green peppers
1 Large Onion
Salt & Pepper to taste
2 Tablespoons Soy Sauce 
2 Tablespoons Balsamic Vinegar
Directions 
Start the grill up!
1. Chop chicken into large cubes.
2. Chop peppers into large chunks.
3. Chop onions into large chunks.
4. Starting with chicken or pepper, thread onto the skewer. 
5. Add pepper or meat next, then onion, pepper, meat, etc.
6. Keep building until about 2 inches from the ends. (you can add to the ends, but it makes it a bit large) I can eat 1 1/2 kabobs, Hubby can eat 2 1/2 kabobs.
7. Salt & Pepper to taste.

8. When coals are grey, place the seasoned kabobs on the grill.
Timing is everything with Kabobs. Hubby enjoys being close to the the grill when grilling. Grill 5 minutes; turn over. Grill 5 minutes more; turn over.
Keep grilling and turning until chicken is no longer pink in centers and vegetables are tender. *Depending on the thickness of the chicken, this may take a bit longer; approximately 20 to 30 minutes. (we love this little grill for charcoal cooking! AND it is easily portable to take camping)
9. Baste kabobs with a mix of 2T. Soy sauce & 2T. Balsamic Vinegar just before serving.
Serve on a bed of rice.
