Whole 30 Food Journey ~ Day 1

Whole 30 Food Choices ~ CJD.Sign
Hi, Sweet Friends,

Well, I really think this is a mental, as well as physical, experience for Hubby and I. It seems like we had just shopped, last week, and purchased healthy items. However, according to the Whole 30, we were picking foods that caused inflammation.
What did we do? We got rid of all the things in our cupboard that were on the No List. This worked well, we boxed them up and gave them away. Will we eat these when we are done? Maybe some, maybe none. But the important thing is that we do this eating plan the right way.

We had a delicious breakfast (forgot to photo) and enjoyed a large salad for lunch.
Supper Roasted Pork Tenderloin, mashed boiled potatoes, tossed salad ~ CJD.Sign

Supper was Roasted Pork Tenderloin, mashed boiled potatoes & tossed salad.

We both felt satisfied and full. I do have to say that Prepping is the Key to the success of this type of eating.

We made our own mayo & ranch style dressing. We thinned it down so that it would not be thick and it covered much better. And the plus is that we used less dressing.

Mayonnaise Recipe
2 Eggs
2 Cups Olive or Safflower Oil
1 Tsp Salt
1Tsp dry Mustard powder
1 Tbs Lemon juice
Directions:
Blend eggs, lemon, salt & mustard in the blender (BLEND) medium speed.
Set to low speed.
Drizzle oil in slowly till the mayo is emulsified and mixed completely.
Put into a lidded jar.
Keep in the refrigerator for up to 2 weeks.

When starting this Whole 30, Hubby and I joked about if we could do this. My medical issues and Hubby's sugar cravings would be a challenge.
The one thing that the two of us noticed the first evening was a pressure in our heads. He took a tylonal and I chalked it up to sleepiness to which, I just went to bed.  So in recap, the first day was a mental challenge to keep our thoughts on good eating. Though both of us looked for the bread!

Enjoy!
