Grandpa's Potato Salad ~ Friday Foods

 Hi, Sweet Friends,
Many of you love to cook like we do. And I am sure that there are a few "Special Recipies" you have in your trove from your relatives and friends. Well, this post is a text message to my Daughter~in~Love, who's hubby, my Son, asked for this delicious recipe. Because there is a lot of extra bits & bobs in it, I thought I would just post the convo of this recipe here for you to enjoy too! I did, take out the LOL's and the funny history bits, but this is the basic recipe for my Maternal Granfather, Anthony's, Ukranian Potato Salad.

"Ok, let me clear up the history part first, Grandpa "Anthony", was Ukranian.
Here is the recipe...
1    5lb bag potatoes
6 hard-boiled eggs
1 cup oil
1/3 cup vinegar/wine vinegar or herbed or white
1 large/2 small onions diced.

Salt and pepper to taste, but it is about 1 Table spoon salt, yes really it does taste better, and 1 tsp of pepper.
Directions:
ok, now listen to this, cuz it really works...
Get the thin skinned potatoes, not the Idaho kind;
those are more for baking and come out pithy when cooked in water.
or look for the reds, not the name "reds" but the color reds, or whites, they are light tan with thin skin
I know weird but it works best.


Ok, so use your large boiling pot for the potatoes, just covered an inch over the potatoes, boil till fork tender.
Drain, then run under cold water to stop the cooking. When still warm but not so that you can't hold them, now, using a butter knife, table knife, not sharp, you will scrape the skin off. It does work, and you get more potato, dig out any eyes and black spots.
Cube the potatoes; I do it in my hand like the way Grandpa taught me, but a cutting board is fine.
Put the potato cubes in a large bowl. Pour over the potatoes, 1/2 of the oil.


For the eggs, if you stick a push pin in the rounder end of each egg before cooking, the egg shell will slip off. really works!
Cube tiny, the hard-boiled eggs; I also do this in my hand, with a sharp knife, but a cutting board works fine too. Add it to the bowl.


Ok, so then you have the onion, dice them. Add it to the bowl.
Then add the rest of the oil and mix. Add the vinegar and mix. Add the salt and pepper, sprinkling as you mix, works better so not to get a mouth full of salty stuff.


It will look a bit runny, but that is ok. the potatoes will soak up most of the stuff.


At this point, I have added parsley. It looks nice and adds a bit of flavor.
Chill in fridge, mixing up about every few hrs till your meal.


This is better cold, but we love it hot or cold. great for camping, picnics and the like.
Oh, and here are the different add ins... now Grandpa never ever did these.


 Just with the salad above,
you can add 1Tbs dried parsley, or 2Tbs fresh parsley, fresh is not a strong as dried.

Daughter in love's version of this Potato Salad! She did great!


next add in.... Matt and Mary have it with mayo added....I hate it this way, personal preference
next add in.... Ranch dressing, love it!! I just add till it looks creamy-ish.
next add in..... 1 Tsp thyme, 1/2 tsp rosemary, 1 tsp cumin, paprika on the top. 

Great for company adding the parsley as above.
next add in... bacon bits cooked/ or from the package and chopped green onions.
next add in...small dice green, red, and yellow sweet peppers. Looks great for picnics and company.
and that is it."

Daughter in love's version of the Potato Salad. She added paprika, green onions, and 1tsp of crushed mustard seed.

 This lasts for 4 days in the fridge, but in my house it doesn't make it past 2, because everyone eats it up fast!
