MAD Hubby's Ribeye Roast For Christmas Dinner

Merry Christmas & God bless us, everyone!
 MAD Hubby made the best Ribeye Roast ever in our Cast Iron Dutch Oven for Christmas Dinner! I have had Ribeye cooked many ways and this is by far my favorite. 

*** Note***
This method is smokey due to the oven's high heat temperature. Disengage smoke alarms for this. Turn them back on after cooking.

This is the Cast Iron Dutch Oven we have. It came preseasoned from Cabella's.


Directions:
"POT Method" using a Cast Iron Dutch Oven

1. Put rack so the Dutch Oven will be directly in the middle of the oven.


2. Preheat the oven to 450℉.

3. Salt & Pepper the outside of the roast. 

4. Keep Roast tied while cooking.

5. Place Roast bone side down in the Dutch Oven.

6. Cover the Dutch Oven with the lid.

7. Place the Dutch Oven on the rack in the 450℉ preheated oven.

8. Set the timer to cook 5min per pound of roast. (Our 4 rib roast cooked 2.5 hours)

9. Turn OFF oven.

10. Leave it set in the oven for 2 hours as is. Don't open the oven.

11. When the timer ends, pull the Dutch Oven out and place it on the top of the stove.

12. Remove the lid.

13. Remove the roast to a cutting board and let rest for 20 minutes. This allows the juices to hold within the meat.

14. Reserve the pan drippings for the beef gravy.


15. Leave the strings on as a guide to help make straight cuts of the roast if you are cutting it for bone-in-meat servings.

16. For smaller cut portions and ribs, cut the strings that hold the roast.


17. Cut off the rib portion of the roast from the lower rib edge to the end, staying close to the bone.


18. Lay the roast, fit side up.


19. Make cuts in between the string lines as well as on the string lines. This makes the roast cut into 8 slices rather than just 4.

20. Serve with your favorite vegetable, side salad and finish with a wonderful dessert!
