Deluxe Apple Pie

We are making a delicious Deluxe Apple Pie made with fresh Pink Ladies & Fuji Apples.

And the crust is a basic pie crust recipe from 


Crust Ingredients:
  • 2 cups, plus 2 tablespoons Gold Medal™ all-purpose flour
  • 1 teaspoon salt
  • 2/3 cup cold shortening or if you prefer, substitute cold butter, cut into ½-inch pieces, for half of the shortening.
  • 6 to 8 tablespoons ice-cold water
  • Pastry blender or fork
  • Plastic wrap
  • Rolling pin
  • Knife or kitchen shears
  • 9-inch glass pie plate
Filling Ingredients:

4 Cups diced apples, peeled
2 Tablespoons lemon juice
1/2 Cup sugar
4 Tablespoons cornstarch
1 teaspoon nutmeg
2 Tablespoons cinnamon
1 Cup water or Apple Juice

Decrease the amount of Cinnamon if you like less. We like cinnamon and Hubby adds the full 2 Tablespoons.
Directions:
Crust:

Filling:

Sprinkle the lemon juice over the cut & peeled apples in a saucepan.
  • Mix the sugar, cornstarch, nutmeg, and cinnamon together and add to the apples in the saucepan.
  • Mix well enough that all the apples are coated with the mixture.
  • Microwave the water or juice for 2 minutes in the microwave. This WILL be HOT! Take out with pot holders.
  • Add the very hot water or juice to the saucepan.
  • Cook, stirring constantly until mixture and apples have thickened.
  • Remove the saucepan from the heat and cool. (refrigerate for better results)
  • Fill the well chilled 9-inch pastry lined pan with chilled pie filling.
    • Cover with the top crust and pinch the edges to keep the filling inside.
    • Bake on the lowest rack in the oven at 425° for 10 minutes.
    • Move the pie to the center rack in the oven until bubbling for about 20 more minutes. 
    • Let the pie cool completely for 3 hours or more (However, 2 hours is plenty, if you like a warm pie with Vanilla Ice Cream!)
