Guacamole Deviled Eggs - Friday Food Extra

Hi Sweet Friends,

Today we have an extra recipe for you! Yes, it may look a little odd, but it is quite delicious! Guacamole Deviled Eggs!

The recipe is really easy.
Ingredients:
1 dozen Eggs
1 ripe Avocado
1/2 cup salsa, drain off liquid
1 can chopped green chilies, drained
Salt & Pepper, to taste
Paprika Or Chili Powder to sprinkle on the top


Directions: 
1. Boil Eggs
2. Peel Eggs
3. Cut Eggs in half, place yolks in a bowl to mash.
4. Place Egg white halves on a plate or an egg tray.
5. Cut Avocado in half
6. Remove the pit
7. Use a spoon and scoop out the green flesh and put into the bowl of mashed egg yolks.


8. Mash and blend together.
9. Add drained salsa and drained chilies to the mixture.
 10. Put mixture (it will look like the green egg mixture above) into a zip bag.
 11. Rolling the bag down like this helps get the mixture into the bag. 
12. Fold the bag back up and press out as much air as possible. Seal Bag.
  13. Cut the end of the bag with kitchen sheers at an angle.

 14. Squeeze the bag towards the cut end tip and put the mixture into the halved egg whites.
Remember, the mix is yellow-green. And will be looking like this below.
I use the Blue Painters tape to transport my eggs to a Picnic, Church Function, or Party.  I usually take one tray of each. 
*NOTE: These egg trays came from Dollar Tree and cost $1.00 each. I bought 4 and use one to place the eggs in and one to cover them. Just line up the egg indentations and seal with the blue painter's tape. Fold up one of the tape ends so it comes off easier.

These eggs were filled with a spoon and it is quite messy. The bag trick works so much better and clean-up is a toss in the trash with the bag! CJD.Sign
For an extra treat, I Scramble eggs and put them on bread with a layer of guacamole on top. Delicious! Or if you have leftover Guacamole Deviled Egg Mix, put it on the bread and enjoy a quick sandwich!
