We are very happy that our local market carries these wonderful mushrooms! These mushrooms are basically small or "baby" portabellos. They are a small version of the delicious older capped Portabellos.

 Here is a delishious recipe that Hubby came up with called Smothered Chicken Burgers with Cremini Mushroom Gravy.

Smothered Chicken Burgers with Cremini Mushroom Gravy
 Ingredients:
  • 4 Chicken Burgers from Colemans cook as per directions on package.
 Sauce:
  • 1 large Onion, sliced
  • 1lb Cremini Mushrooms, washed and sliced.
  • 2 Cups Beef Broth
  • 2 tsp. garlic powder
  • 2 tsp. onion powder
  • 1 Tbs. Worcestershire sauce (optional)
  • 1/4 Cup Cold Water 
  • 3 Tbs. Arrowroot
  • Salt & Pepper to taste
Sauce Directions:
In a medium saucepan bring beef broth to boil over medium-high heat. Stir in garlic powder, onion powder, and Worcestershire sauce (optional).
In a small bowl whisk together cold water and cornstarch until dissolved. Pour half the mixture into boiling beef broth and reduce heat to medium-low. Stir in the rest and keep stirring until thickened. Season with salt and pepper. Taste, add more salt and pepper if needed. (I don't use extra salt. Hubby & his mom salt their own at the table.)

Hubby's Dairy-Free Mashed Potatoes
Dairy-Free Mashed Potatoes:

  •    5 pounds Russet potatoes
  •     2.5 tablespoons kosher salt
  •     10 tablespoons ghee
  •    10 tablespoons unsweetened flax seed milk.
 (leftovers are to make latkes in the morning)
 Directions For the Potatoes:
       Bring water, enough to cover potatoes, to a boil in a large pot.
    Peel, dice into chunks and add the potatoes to the pot. Boil potatoes until fork tender.
    Drain the water off the potatoes in a colander.
  Return the potatoes to the pot and mash them with a potato masher or put them in a food mill or potato ricer and then into the pot. (We prefer a chunky mashed potato)
    Add the salt, ghee, and flax milk to the potatoes and continue to mix until the ingredients are blended. We use a handheld mixer to do the work for us.
   Add more salt or add more milk if needed. We served these potatoes with lots of mushroom gravy and a side of garden canned green beans.


Creminis have a delicious beefy flavor and we have added them to many vegetarian style dishes. However, they are our favorite mushroom for any type of dish that you can pop mushrooms into! We love these little beauties! YUM! Portabello mushrooms are the adult version of these delicious baby mushrooms. More information HERE
