What a YUMMY dish! This dinner was so easy to do the prep and throw it in the oven! How easy is that to eat clean!

This recipe was found on Pinterest, since we had company, I doubled the recipe and we still had left overs!

 Ingredients:


Gluten free, Paleo∙ Serves 4
Meat
  • 1 1/4 lb Chicken breast, boneless skinless
Produce
  • 3 tbsp Basil, fresh
  • 1 head Broccoli
  • 2 cups Button mushrooms
  • 3 Carrots, medium
  • 1/2 cup Cherry or grape tomatoes
  • 4 Garlic cloves
  • 1 Red onion, small
  • 1 tsp Thyme, fresh
Condiments
  • 1/3 cup Balsamic vinegar
Baking & Spices
  • 1/4 tsp Pepper
  • 1/2 tsp Sea salt
Oils & Vinegars
1/4 cup Avocado or olive oil
