8 Delicious Salads

Hi Friends,
 Today we are sharing some great salads!
I am always looking to "change it up" when making my salads! So, I've made a few to share with you. I hope you find one that you like as much as I do!


Crunchy Peppers Salad
Spring Mix Lettuce
1/8 Cup Water Chestnuts (sliced into sticks) 
1 Green Onion (sliced)
3 Roasted Red Peppers (jarred & sliced)
6 Pickled Pepperochini slices

1/4 Cup Tortilla Sliced Salad Topping (sea salted)
 2 Tbs Raspberry Walnut Light Salad Dressing

All these salads start with the lettuce and build your salad! Enjoy these

Stop Light Peppers Salad
Spring Mix Lettuce
Spinach leaves
1/2 Avocado (sliced)
1 each Red, Yellow, Green Sweet Peppers (sliced)
 1 Green Onion (sliced)
3 Roasted Red Peppers (jarred & sliced) 

1/8 Cup Parmesan Cheese 
2 Tbs Raspberry Walnut Light Salad Dressing

 Bursting Blueberry Salad

Spring Mix Lettuce
Cherry Tomatoes
1/2 Avocado (sliced) 
1/4 Cup Fresh Blueberries
1/4 Cup Mozzarella Cheese (shredded) 
1 Tbs Flax Seeds
Dressing:

Double Squash Delight Salad

Spring Mix Lettuce
Yellow Summer Squash (sliced & quartered)
Zucchini Squash (sliced & quartered)
1 Green Onion (sliced)
2 Tbs Italian Dressing
1 Tbs Flax Seeds


Avocado Strawberry Salad
Spring Mix Lettuce
1 Green Onion (sliced)
1/4 Cup Cheddar Cheese (shredded)
1 tsp Flax Seeds
1 tsp Hemp Seeds
1 tsp Chia Seeds
3
Tbs Chipotle Ranch Salad Dressing (a bit extra for dipping)
5 Small Strawberries
1 Small Avocado



Roses are great in salads!



Fresh Dandelion Greens are great right out of the garden, Eat them when they are small.

Rose & Cranberry Salad 

Spring Mix Lettuce
1 Green Onion (sliced)
Fresh Rose Petals
Dried Cranberries
1 tsp Chia Seeds
 2 Tbs Raspberry Walnut Light Salad Dressing
Topping of Parmesan Cheese




Lambs Ears fresh, are delicious additions to salads.

My Red Salad
2 cups Greens - dandelions, red leaf, black seeded simpson, oak leaf, romaine, beet leaves, radicchio or other greens you have on hand.
1 Cup Roasted Chicken - shredded
1/2 cup Red Grapes & Red Raspberries
1/2 Tomato - thinly sliced
1/2 Cup Roasted Red Peppers
1/4 Cup Pablano Pepper - chopped
1 Green Onion - sliced thinly
1/4 Cup Red Wine Vinegar & Raspberry Walnut Dressing - mixed
1/2 Cup Mozzarella & Cheddar Cheese -mixed & shredded
1/2 Avocado -sliced
1 Tablespoon Flax Seeds

Start with the lettuce greens, radicchio, dandelion leaves on the plate.
Add the green onion and all the rest of the toppings, ending with the dressing. I take the sliced avocado and put the flax seeds on half of each slice. I then put the grapes on the side. These on the side make this salad a bit easier to eat.
 
 This  is one of my very favorite Summer Salads when my garden is in full swing. Harvesting the vegetables in the am, making it up and popping it into the refrigerator ensures a great dinner time salad!
