Fajitas or Quesadillas ~ Friday Foods
Fajitas or Quesadillas
Ingredients:
1 lb beef (Venison, Buffalo, Elk) roast
1 pkg Fajita flavor packet
Water (see flavor pkt for amount)
1 1/2 cups sliced sweet peppers
4 10-inch flour tortillas or wheat flat bread
3/4 cup shredded cheddar cheese
Fresh cilantro (optional)
Directions:
Slice meat into strips, Onion & Pepper into slices.
Then slice with flat half side down. Leaving the end on the onion gives you a grip for cutting that last bit of onion.
Core pepper and cut into manageable pieces. I do this for a more even strip of pepper.
Slice the peppers with the skin side down for more control and easier cutting
In large skillet combine onions with Olive, Peanut, or Coconut oil and saute'.
Add back the beef strips in its juices, fajita mix & water, into the pan with the onions, and peppers.
Cook, over medium heat for 10 to 20 minutes, stirring occasionally.
For fajitas, spoon some of the beef mixture on half of the tortilla, top with cheese, fold, and serve. or flat bread is a nice change from the flour tortilla.
For quesadillas, spoon some of the beef mixture on half of each tortilla. Fold tortillas over meat, then fold in quarters. Place on a sheet pan lined with foil. Sprinkle cheese on each tortilla top. Broil 1 to 2 minutes or until cheese is melted and tortillas just begins to crisp. Top with cilantro to serve. *not pictured.
Serve with rice & beans!
