Friday Foods - South Western Scramble

2 eggs, Flax seed oil spread, cumin, parsley, onion, mushrooms, green chiles, salsa and Swiss cheese.
Starting off with the ingredients of my yummy new breakfast creation (above)

Colorful sweet peppers

Melt the flax seed oil spread in a cold pan on high to coat the pan.

Add your eggs, scrambled with the cumin and parsley. over the sauteed onions and sweet peppers chopped.

Serve up with  salsa on the sides, I put mine around the dish for easy mixing.
Top with green chiles and sliced Swiss cheese and you have a delicious low calorie breakfast.
