Tender Pork Roast ~ Friday Foods

 Hi, Sweet Friends,

Today on Friday Foods, we are making a delicious tender pork roast. We've paired it with Jasmine rice & zucchini squash.
 Ingredients:
Pork Loin
Garlic Powder
Basil,
Parsley,
Onion Powder
Thyme
Rosemary 

Directions: 
1. Preheat the oven to 350*F
2. With aluminum foil shaped like a basket for the loin to sit in. 
3. Place the aluminum on a baking sheet like the one in the photo above.
4. Rub the top of the loin with the spices and herbs listed. I place about 1 Tablespoon of the powders, 1 Teaspoon of the herbs into a small bowl. Mix them and use them as a rub. Whatever is left, place in a zip lock type bag for another rub.
 5. Place the loin on the aluminum "basket" and cook for 1 1/2 hours or until the inside of the loin reaches 140°F - 145°F.
6. Remove the loin from the oven and let it rest on the pan for 20 minutes. This allows the juices to remain in the roast and not make the loin dry.
7. Slice the loin in 1/2 inch slices as the photo below or as thick as you want.
8. Serve with the Jasmine rice and the zucchini.
