3 New Pumpkin Bread Recipes ~ Friday Foods



Hi Sweet Friends!
Today we are making Pumpkin Bread. Now, in my home, just a few of us love to eat Pumpkin Bread, however, all of us love the smell of it cooking and the lingering aroma in the house afterwards!

   

As suggested on Kimberly's website, Natural Beach Living,
I am looking for a new Pumpkin Bread recipe.
 So, thinking like a test kitchen... 
here are a few of the new recipes I am going to try:
  1. Cranberry Pumpkin Bread
 This moist, cake-like quick bread makes a great breakfast or dessert in the cooler months. Perfect for making mini-loaves as gifts.
Vegetarian
∙ Serves 18-20
Produce
  • 1 cup Cranberries, fresh
  • 1 15 oz can Pumpkin, canned unsweetened
Refrigerated
  • 4 Eggs
Baking & Spices
  • 1 tsp Allspice, ground
  • 1 tsp Baking powder
  • 2 tsp Baking soda
  • 1 tsp Cinnamon, ground
  • 1/2 tsp Cloves, ground
  • 3 1/2 cup Flour
  • 1 tsp Nutmeg, ground
  • 2 tsp Salt
  • 3 cup Sugar
Oils & Vinegars
  • 1 Nonstick spray
  • 1 cup Vegetable oil
Nuts & Seeds
  • 3/4 cup Walnuts
Liquids
2/3 cup Water

2. Cranberry Pumpkin Muffins
Yields: 12 muffins

These tender muffins are perfect for any pumpkin lover! They’re full of cozy spices and fresh, tangy cranberries. Leftovers will keep for at least 5 days if stored in an airtight container in the refrigerator. To reheat individual muffins, microwave for 12-15 seconds.

  • 2 cups (240g) whole wheat or gluten-free* flour (measured correctly)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground ginger
  • ½ tsp salt
  • 1 tbsp (14g) coconut oil or unsalted butter, melted and cooled slightly
  • 2 large egg whites, room temperature
  • 1 ½ tsp vanilla extract
  • 1 cup (244g) pumpkin purée, room temperature
  • ¼ cup (60g) plain nonfat Greek yogurt
  • ⅓ cup (80mL) pure maple syrup
  • ¼ cup (60mL) nonfat milk
  • 1 cup (110g) fresh cranberries, chopped

3. Skinny Pumpkin Muffins
Time: 30 Minutes
Makes 6 muffins

What You'll Need: 
  •  3/4 cup of all-purpose flour
  •  1/2 cup of sugar
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  •  1/4 teaspoon salt
  •  1 tablespoon melted coconut oil
  •  1/4 cup water
  •  1/2 cup 100% pure pumpkin

So, I have made all three of the Pumpkin Recipes above. I have tried them out on family and friends. With each recipe so different, they all tasted terrific, it was so hard to come to the final choice. So, I am keeping all three for the Recipe Box! Yep, couldn't decide on this one!
